Maria’s Mexican Burritos Serves 6 people (2 large burritos each) Ingredients: The Filling 1 kg of lean minced steak 1 large onion, (finely chopped) 4 garlic cloves (finely chopped) 2 green fresh chillies (or more if you like it hotter), finely chopped Pinch of salt Freshly milled pepper 2 tsp of ground cumin 3 tsp of dried oregano A 400g can of chopped tinned tomatoes/ or fresh chopped tomatoes without skin 1 tbsp of tomato puree You can add raw vegetables such as diced carrots, potatoes, peppers, courgettes, frozen peas etc. Or any leftover cooked vegetables you may have in your fridge. A 400g can of borlotti beans, drained Large bunch of fresh chopped coriander The Burritos 6 tortillas, wheat flour ones are widely available in the supermarkets or traditional corn tortillas also suitable. 2 jars of Maria’s homemade Salsa, (www.casamariastore.com) 01736 367353 300gms (approx.) of grated mature cheddar cheese Salad Topping Shredded iceberg lettuce to use as topping Optional: Add sweet corn, chopped cucumber, peppers, and / or radishes to the lettuce Method Brown the minced steak in a large frying pan. Add the onion and garlic and brown a bit more. Add chillies, salt, pepper, cumin, and oregano and cook further for a couple of minutes. Put in the tomatoes, tomato paste and any vegetables you may want. Cook for further 15 minutes, or until the vegetables soften Stir in the borlotti beans and leave for 2 more minutes. Add the coriander, and switch off. Set aside and keep warm. Making the Burritos Fill each tortilla with mince, and then roll it up before placing it in an oven dish Fill the dish with as many burritos as necessary in a single layer Pour some of the salsa on top of each burrito without drowning them in it Cover all the burritos with grated cheese and bake in a moderate oven (180 degrees C) until the cheese is melted, and slightly crispy Put two burritos on each plate cover with the salad topping Serve with warmed up Maria’s Salsa to add more zing and optional sour cream.
